Cozy Beef Stew

In the winter months, it is really hard to eat say, a salad, for dinner. You want something warm, cozy, and comforting. Sometimes it can be challenging to have all of those things and have it be full of good for you food. But this cozy beef stew is just that. It's chock-full of hearty veggies, tender beef and for good measure, scrumptious red wine.


I threw this recipe together one night when I was craving comfort food but knew I should probably eat some vegetables, too. I love this recipe because it can be made with whatever you have in the fridge when it comes to veggies. Below is what I started with but it is different each time I make it so have fun with it!


Cozy Beef Stew - makes about 6 servings




Ingredients:

2 lbs beef chuck roast - cut into 1" cubes

5 medium gold potatoes - cut into 1" cubes

3 carrots - cut into 1/2" rounds

1/2 medium yellow onion - diced

1 14 oz can diced tomatoes

3 tbsp tomato paste

3 cups beef broth

1/4 cup red wine

1 1/2 tbsp olive oil

1 tbsp coarse salt

1 tbsp ground black pepper

1/2 tbsp garlic powder

1/2 tbsp onion powder

4 cloves garlic - minced

3 sprigs fresh thyme



Instructions:

  1. In a heavy-bottomed pot or dutch oven, on medium heat, heat the oil and saute the onions and garlic until fragrant.

  2. Add the beef and stir to brown on all sides.

  3. Add the carrots, potatoes, diced tomatoes, tomato paste, and seasonings. Stir together to mix in the onion mixture and seasonings.

  4. Add the beef broth, red wine, and thyme sprigs. Stir together until mixed.

  5. Let the stew come to a low boil then reduce the heat to low.

  6. Simmer for 1 1/2 - 2 hours on low.

  7. Once the meat is tender and potatoes and carrots are soft, remove 1 1/2 cups of the stew liquid and transfer it to a bowl. Add the flour and whisk until combined and smooth. Add the thickened mixture back to the pot.

  8. Stir to combine and mix the thickened liquid with the rest of the stew.

  9. Serve with a hearty slice of french bread and enjoy!
