One of our favorite Friday night movie-night meals is wings and instead of ordering them, my hubby and I decided to make them last week and the result was FREAKING DELICIOUS! I was wandering through Sam's Club tossing things in my cart I most certainly did not go there for and I came upon the wings in the refrigerated section. I personally love whole wings, not the separated wings and drumsticks. They had about 3 lb. packages of full wings for $14-ish per package. Score! I brought them home and decided that we should bake the wings instead of frying them. Helloooo healthier option! I researched a few different baked wings recipes and decided to make a rub of my own that came from a few different suggestions. I like to say I "Katie-fied" the recipe. So here is my recipe as well as some "Katie original" sauce options. I hope you enjoy! Baked Wings:
1 gallon freezer bag
2-3 lbs wings (can use whole or separated drumsticks and wings)
1 1/2 tbsp baking powder (The secret ingredient to crispy baked wings)
1 tbsp paprika
1 tbsp coarse salt
1 tbsp black pepper
1 tbsp garlic powder
1tbsp onion powder
1 tsp cayenne pepper (If you like 'em spicy)
Prepare two baking sheets with either foil or silicone mats. Place a cooling rack on each baking sheet to help with air circulation while the wings are in the oven.
Pre-heat the oven to 425 degrees.
Pat down the wings with clean paper towels. You want to remove as much moisture as possible.
Add the dry ingredients into the freezer bag and give it a good shake to mix them together.
Add about 5-6 wings at a time. Close and shake the bag until the wings are completely covered.
Place all of the dry ingredients into the freezer bag and add about 5-6 wings at a time. Close and shake the bag until the wings are completely covered. Put coated wings on the baking sheets.
Repeat until you have filled the baking sheets. Note*** You may need to make the dry rub a few times depending on how many wings you have.
Place the baking sheets with wings into the oven on the middle and bottom rack. Set the timer for 20 minutes. You will bake the wings for a total of 60 minutes, turning the wings every 20 minutes.
You may need to switch the bottom and middle rack of wings around the 40 minute mark to ensure even baking.
After 60 minutes, remove the wings and let cool a bit before consuming or coating in your choice of sauces. Serve with ranch or blue cheese and some crisp veggies!
Sriracha Honey Wing Sauce
1/4 cup Sriracha
1/4 cup honey
1 tbsp red wine vinegar
1 tbsp brown sugar
Combine all ingredients in a large mixing bowl. Add a few wings at a time with tongs, toss and place on a serving tray.
Leveled-Up Buffalo Sauce
1/2 cup Frank's Red Hot Buffalo Sauce
2 tbsp brown sugar
1/2 tbsp garlic powder
2 tbsp melted butter
1 tsp black pepper
1 tsp cayenne pepper
Combine all ingredients in a large mixing bowl. Add a few wings at a time with tongs, toss and place on a serving tray.
